Go for flavour and convenience with this seasoned traybake featuring our Giant Beer Battered Onion Rings! Full of vegetables like parsnips, spring carrots and leeks, to give it a Middle Eastern flavour, pomegranate and almonds have been added. Baharat, an Arabic spice mix, and mint complete this flavour combination.
Preheat the oven to 180°C. Mix the Baharat spices with 5 tablespoons of sunflower oil. Season with salt and pepper. Place the carrots, parsnips, leeks and red onion on a baking tray lined with baking paper and mix with the marinade. Bake for 25-30 minutes in the middle of the oven, checking that the carrots are cooked by pricking them with a fork. Huff halfway through.
In the last 10-12 minutes, also toast the almonds until golden brown. Set aside and let cool. Then coarsely chop the almonds.
Then bake the Giant Beer Battered Onion Rings in the oven, air fryer or deep fryer. The correct baking times are indicated on the packaging.
Finish the traybake with the Giant Beer Battered Onion Rings, pomegranate seeds and fresh mint. Serve the traybake with Greek yoghurt.
