This Japanese classic with a twist is a feast on the plate. The okonomiyaki - a savoury pancake filled with crispy white cabbage and spring onion - is richly garnished with crispy Breaded Onion Rings. Topped with fresh mayonnaise, spicy sriracha sauce, sweet hoisin sauce and a touch of nori for that authentic Japanese umami flavour experience.
In a large bowl, mix the flour, baking powder, water, eggs and soy sauce into a smooth batter. Add the sliced white cabbage and two-thirds of the spring onion and mix well.
Heat a dash of oil in a frying pan over medium-high heat. For each pancake, spoon a generous spoonful of the mixture into the pan and flatten slightly. Fry the pancakes until golden brown and cooked on both sides (about 4-5 minutes per side). Fry the okonomiyaki until the batter is finished.
Meanwhile, bake the Breaded Onion Rings in the oven, airfryer or deep fryer. The correct baking times are indicated on the packaging.
Place the okonomiyaki on a plate and garnish with zigzags of Japanese mayonnaise, hoisin sauce and sriracha sauce. Spread the onion rings on top and sprinkle with the rest of the spring onion and nori flinters. Serve immediately and enjoy this tasty Japanese creation.
