A sophisticated canapé in which creamy Brie Bites and sweet apricot chutney come together perfectly. The light and airy brioche crouton provides a delicious crunch, whilst toasted flaked almonds add a subtle nutty flavour. Warm, soft and full of flavour – an elegant combination that fits effortlessly on a shared dining table or a luxurious canapé platter. A small bite with a grand and surprising flavour story!
Heat a saucepan with a dash of olive oil over a medium heat. Fry the shallot with a pinch of salt until translucent. Add the apricots, water, white wine vinegar, sugar and ginger to a saucepan. Bring gently to the boil and simmer for 15–20 minutes until you have a thick, slightly chunky chutney. Allow to cool slightly. Taste and season with salt to taste.
Meanwhile, cut 24 circles out of the slices of brioche bread (or cut into small rectangles). Brush lightly with olive oil and fry them in a frying pan until they are golden brown and crispy. Set aside and leave to cool on kitchen paper.
Cook the Brie Bites for 2.5–3 minutes in a deep fryer at 175°C, in a preheated oven at 220°C for 8–10 minutes or in a preheated air fryer at 180°C for 7–8 minutes.
Spoon a little apricot chutney onto each brioche crouton. Top with flaked almonds, followed by a warm Brie Bite. Garnish with microgreens and serve immediately.
